I had a curry bowl at work recently. I hadn't eaten and since the cafeteria was opened for an event after hours, this was the only thing I could grab that was vegetarian. It looked good… but something was missing. It was bland. I doctored it up as best as I could and scarfed it down to ease my grumbly tummy. But it was at that moment, I had an idea.


So instead of settling, I took that idea home and did what I always tell my clients to do—make it work for YOU. More flavor. More balance. More intention. I thought to myself, "now this is how you build a meal that actually works for you instead of against you."

  • TVP (Textured Vegetable Protein) → lean, high protein, absorbs flavor like a sponge. For some because it is soy, it can be an allergen but if this is the case, you can substitute your favorite meat grounds or "walnut ground meat" which is also a great plant based option.

  • Chickpeas → fiber + plant protein = keeps you full and satisfied. My fav for meals on the go!

  • Coconut curry sauce → flavor bomb (this is what makes it crave-worthy). I legit got this in the supermarket and it has been my fav ever since. Side note, I Shop-rite's store brand and it was impressive.

  • California blend veggies → easy nutrients, no overthinking

🛒 Ingredients (No perfection needed)

  • 1–1.5 cups California blend veggies (frozen is fine)

  • 1 cup pepper & onion mix (fresh or frozen)

  • ½–1 cup coconut curry sauce

  • 1–2 cups rice or quinoa (optional base)

Flavor Boosters (don’t skip these 👀)

  • Lime juice

  • Chili flakes or cayenne

  • Nutritional yeast

  • Fresh parsley

  • Handful of spinach or spring mix

Optional Side:

  • Green beans (steamed or sautéed)


🍳 How to Make It (Simple + Real-Life Friendly)

1. Rehydrate & Season the TVP

Soak in hot water or broth. Add garlic powder, onion powder, or curry powder if you have it.

2. Build Your Flavor Base

In a pan, sauté your pepper & onion mix until slightly softened.👉 This step alone changes everything—don’t skip it.

3. Create the Curry & add:

  • Chickpeas

  • California blend veggies

  • Coconut curry sauce

Let it simmer so everything gets coated and infused.

4. Bring It Together

Add your TVP and mix well. Let it cook a few more minutes so the flavors really come together.

5. Level It Up (this is where the magic happens ✨)

Turn off heat and add:

  • Squeeze of lime juice

  • Chili flakes or cayenne

  • Nutritional yeast

  • Fresh parsley

Optional: toss in spinach to lightly wilt.

6. Build Your Bowl

  • Base (rice/quinoa or keep it low-carb)

  • Curry mixture

  • Side of green beans
