It's October & it's the weekend... so I had to post another Foodie Friday recipe.

Since my my oven has been out of commission for a while, I haven't been doing much baking save for a close friend who begged me to bake some vegan mac and cheese. Of course there were the few times when my neighbor let me throw some vittles in the oven at 375 for about 30 minutes.
But other than that, my need to bake has been starved... (I am seriously thinking about using that work oven one day after I punch out but I haven't become that desperate yet... maybe lol).

All that aside, I thought what about my famous apple crisp I make for Rosh Hashanah or a random fall day? And then I looked up at my rack at my poor slow cooker collecting a bit of dust since I last made some stew and said... YAHTZEE!
Forget the oven drama and let your slow cooker do the dessert magic with this easy apple crisp recipe! This sweet treat is like a warm hug from your grandma, but without the awkward cheek pinching. Packed with fresh apples and oats that are more irresistible than a puppy in a bow tie, this dessert is guaranteed to make your taste buds do the happy dance. Serve it with a dollop of ice cream (dairy free of course duh) and watch your family fight over the last scoop - because who said sharing was caring when it comes to apple crisp?

INGREDIENTS
6 small apples, peeled, cut into 1/2-inch slices (6 cups)
1/2 cup granulated sugar
2 tablespoons all-purpose flour
1/2 cup of brown sugar
1/4 teaspoon of baking powder
1/4 teaspoon of baking soda
1 teaspoon ground cinnamon
1/2 teaspoon of nutmeg
TOPPING
1/2 cup all-purpose flour
1/2 cup old-fashioned oats
3/4 cup packed brown sugar
1/4 teaspoon salt
1/2 cup cold plant based butter, cut into 8 pieces (I used Violife but you can use Miyoko or Country Crock)
Ice cream, if desired
INSTRUCTIONS
Place apples in large bowl; add granulated sugar, 2 tablespoons flour and the cinnamon. Stir until apples are evenly coated.
Spray 4- to 5-quart slow cooker with cooking spray. Place apple mixture into slow cooker.
In large bowl, mix 1/2 cup flour, baking soda, baking powder, the oats, brown sugar and salt. Stir until well combined. Using fork or pastry blender, cut cold butter into mixture until crumbly. Sprinkle over apple mixture.
Cover and cook on High heat setting 2 hours. Turn off heat; remove cover, and cool 30 minutes.
Serve warm with a scoop of your favorite ice cream. (I chose So Delicious' Caramel Cluster Cashewmilk Ice Cream)
Now since this calls for some carbs, you can rest easy knowing I have just the solution to burn it off. Now personally, I don't think food should be punished or rewarded when eaten in moderation but if it eases your mind, try a Zumba class or substitute the ice cream with a protein shake.
This recipe is probably my easiest recipe even when you bake it the traditional way in the oven. While that version is my more preferred method of preparing, this version wasn't too bad at all... if I do say so myself. It's almost as if I saw it on the back of a flour package...lol.
